Salted caramel is the dessert flavour of the moment! And there is no reason you should miss out on enjoying this sweet and salty favourite by introducing it as a little treat to enjoy once in a while. This recipe is for a dessert or snack option that will blow your tastebuds away – fear not, we’ve made sure it’s healthy too!

For the Salted Caramel:

1 cup natural almond butter

1 cup desiccated coconut

1/3 cup natural almonds, roughly ground

1/2 cup coconut nectar (or more to taste)

1 tsp vanilla powder

Generous pinch of sea salt

For Chocolate:

1 cup of coconut oil

1/2 cup of cacao powder

4 tbsp of rice malt syrup

1. Combine all ingredients for the salted caramel mixture, using your hands to get a nice dough-like consistency.

2. Create little round balls (bite size!) out of the salted caramel mix. Place on a tray lined with non-stick baking paper and transfer to the fridge for at least 30 mins. In the meantime, make your chocolate.

3. For the chocolate, melt coconut oil over low heat in saucepan.

4. Pour into a medium sized bowl. Add cacao and stir.

5. Add rice malt syrup and stir.

6. Remove the salty caramel balls out of the fridge and dip them one by one into the chocolate. You may want to dip twice to get a smooth creamy finish.

7. Place in fridge for 30 mins or until set.
