Roasted Tomato, feta and Basil Spaghetti

Serves 2

1 packet SlimPasta Spaghetti
8 small truss tomato
125 grams Persian feta (crumbled)
½ cup fresh basil leaves
1 tablespoon dry mint
1 tablespoon olive oil
1 clove garlic
olive oil spray
salt and pepper if desired

  1. Prepare SlimPasta Spaghetti as per instructions on pack
  2. Place truss tomatoes on baking paper and lightly spray with olive oil and place in oven. Cook at 180 degrees for 6-8 minutes or until just cooked
  3. n pan place olive oil, heat gently add garlic cook until fragrant add prepared SlimPasta to pan and coat with oil and garlic
  4. Remove spaghetti from pan add crumbled Persian feta, basil leaves and mint and gently toss through
  5. Divide spaghetti between bowls. Spoon over roasted tomatoes and any juice.
