Make Mexican Egg Scramble!

SERVES 1 | PREP:2mins | COOK: 10mins

A great way to start the day! If you make extra serves, it can double as a protein-rich snack.


2 eggs
2 tbs Greek yoghurt
1 tsp smoked paprika
pinch of Mexican chilli powder
pinch of Mexican spice (optional)
salt & pepper to tatse
2 tsp olive oil
1/4 red onion, finely chopped
1 tomato, roughly chopped
1 capsicam, roughly chopped
1 tbs fresh parsley, chopped


1. In a small bowl, beat together the eggs, yoghurt, spices, salt and pepper.
2. Heat frying pan over medium heat, add oil and saute onion for a few minutes, add tomato, capsicam and cook for a few more minutes.

Pour in eggs and continue to cook, pushing mixture in from the edge, until cooked through.
3. Remove from heat and serve sprinkled with parsley.
